Saturday→ Fish, Potatoes and Collard Greens
|
Aimee prepared a delicious dinner of fish, roasted potatoes with garlic and Parmesan cheese and collard greens. It was delicious - fish was prepared to perfection, the potatoes were delicious as the garlic and Parmesan cheese blended together. As a lover of greens, the collard greens were like the frosting on the cake. Let's take a moment to appreciate the greens and all the nutritional benefits that it offers.
- high in antioxidants
- fiber
- iron

- potassium
- calcium
- low calories

Furthermore, the greens are touted for lowering the risk of a variety of diseases - cancer, diabetes and heart disease. In fact, the USDA also known as the United States Department of Agriculture recommend the greens for both women and men. Women should consume at least a cup and a half of greens per week. Men on the other hand, should have up to two cups. Thank goodness, that is covered in our household. We are eating greens with just about every other meal. The digestive system will also be happy as the fiber will ease along the waste matter out of the body. Check out Sunday's Dinner. Shrimp, brown rice aaaaand --- Broccoli (scrub, scrub ๐)
