I Think I Love Eggplants 😍

Well, it looks like I have developed a faux pregnancy craving or my taste buds have finally matured and expanded the menu items to include → eggplants. However, I still detest ochroes, that's like eating the remnants of a cold. I have developed a love for eggplant and I noticed it before we went vegan for lent.

It all began with a delicious eggplant parmesan that I had at a dinner. It was deeeelicious. I was so surprised that I actually had a second serving. In fact, whenever I see eggplant being served at an event, I will have some and it makes me wonder, why have I not had this before? It's time to do something about it.

 Now, I am on a search to find some eggplant recipes that I can try. I am looking through the internet and finding that there are thousands of ways to make your eggplant. I have selected a few that really stood out for me - not to mention the benefits that it offers (see below).
