Greens, Shrimp & Grits
I headed to the reception with great anticipation, I was certain that there would be salmon - by far my absolute favorite fish. The lights were dimmed with a purple hue, the food was out at different stations. As a pescatarian, I carefully selected the items. I actually thought that it was mash potatoes, I added a generous portion and of course tossed in my greens - spinach, asparagus and peppers.
As I began to eat, I realized that the mash potatoes were actually grits. While I am not a fan of grits, I continued to eat and bare it. The goal of our vegan, vegetarian, pescatarian journey was to be open to try new things. I have tried grits a number of times and I only found one to be tasty and that's because it is made with some other flavors that offer the right taste. This experience has opened me up a bit to try grits more often than once every four years. The dinner was pretty enjoyable.
While April is ending, we recognize that our sacrifices and trials have given us a great opportunity to learn how we can make better choices in our dietary intake. Tomorrow is the 1st day of May and the family will continue to live within the free range of eating whatever they want as we have pulled away from the various eating lifestyles. However, our dinners at least the homemade dinners will be in for a major renovation.
