Homemade Vegetable Lo Mein and Spring Rolls
Another family chef has stepped up and delivered us a delicious homemade vegetarian meal. In fact, the vegans would rejoice. Our dinner was prepared with all of the ingredients that they would deem acceptable. We ate a generous portion of lo mein which included mixed vegetables, chopped peppers, onions, garlic and ginger. To top the meal off Asian style, our daughter Aimee also treated us with her homemade spring rolls. They were stuffed with cabbage, chopped carrots and ginger. It was ultra delicious. Guess what we've noticed - our Asian meals are easily prepared and are delicious in vegan, vegetarian or even just a regular meal that hits the hungry spot. Today is our final day of being vegetarian. This was a fun journey. It's not over yet but we will be sure to fill you in.
