Homemade Banana Nut Raisin Muffin
So you may be wondering or may not - but I'm sharing anyway. Breakfast these days are much easier. The vegetarian journey offers more options - we use eggs, milk, butter, cheese without worrying about violating the vegan rules.  My assistant Autumn and I headed to the kitchen to prepare breakfast. There would be no pancakes, no cereal, no grilled cheese, we will make our very own banana nut raisin muffins. 

After making the vegan banana nut raisin bread during the vegan journey, making banana nut raisin muffins would be fun. We gathered the ingredients, mixed them up, filled the muffin pans and placed them in the oven and waited. Can I tell you? There's something about baking and the aroma that permeates throughout the house. It smells soooo good and they were divinely delicious. Needless to say, they were fresh from the oven warm and devoured by all.



Homemade Banana Nut Raisin Muffins

Homemade Banana Nut Raisin Muffins ⭐⭐⭐⭐⭐(✨✨✨✨✨)
La Recipe

3 ripe bananas
1 large egg
1 cup of sugar
1/3 cup of vegetable oil
1 teaspoon of baking soda
1 teaspoon of vanilla extract
1/2 teaspoon of salt

Mix the ingredients (While other recipes suggest mixing the ingredients in stages/separately, I pour them all in a bowl and mix it together all at once - it saves time and, its going to be mixed together anyway). Grease your muffin pans very lightly (butter/vegetable oil).

Baking Time 20 -25 minutes
Bake at 375 degrees
