Ladies and gentlemen, boys and girls - we have stepped it up another notch. The King has delivered to our Vegan for Lent experience. As if to say, it's time for an intervention - he comes in baring two pretty pink bags with earth friendly containers of meals and sauces (house made sriracha and garlic aoili).

Let me make my announcement now - if you are able to get to Dig Inn - do so. Dig Inn serves seasonal vegetables and has a specialty menu that includes vegans. Everything, I mean everrrr - ry thing was delightfully delicious. From the grilled tofu, roasted carrots, sautéed broccoli to the brown rice - it was a burst of flavors at every chew. As I mentioned in Sacré bleu - Sunday Dinner - Left Overs and Such, Sunday dinners are a big deal and what a big deal this was.

As we have crossed over the halfway point in our vegan journey, this meal has certainly served as a boost in our vegan journey. I could certainly relate to the gospel song - I feel like going on...

The King's Dig Inn Vegan Selection

Brown Rice prepared with fresh parsley, lime juice, red onions and thyme olive oil
Coconut Roasted Carrots seasoned with coconut oil, coconut sugar and warm spice
Grilled Organic Tofu - fresno pepper, pesto and red onion.
Maple Cauliflower with Chickpea Crumble includes green cabbage, caper, raisins, maple mustard vinaigrette
Sautéed Broccoli with lemon

All hail to the King who delivered to the family, we enjoyed it - royally.
