Attended a breakfast symposium this morning. There was not even a thought about it, I have attended many breakfast meetings. It was an early start to the day. Upon arrival, I checked in, went to the coat check area, smiled with everyone in sight and made my way to find my seat. I placed my bag down and then headed over to the breakfast area. I stood on the line and made small talk (light conversation) with the lady standing next to me. As we got closer to the breakfast spread, there it was - a variety of bagels with your choice of butter or cream cheese. No jam or jelly, that was it. I heard that bagels are vegan safe, so I took a half of a plain bagel and poured myself a cup of coffee.
I sat down in my seat and prepared to nibble on my bagel while sipping on my coffee. I thought about the countdown to the end of lent - the end of the vegan journey. I wondered how does a vegan cope in a mostly non vegan world. There was no vegan butter, no vegan jelly or vegan labeled bagels. It dawned on me that the vegans must know this and therefore they are most likely prepared.
I took a bite of my bagel and it was as hard and dry, just the way the pigeons like it. I knew that I would have to rely on my coffee to make it palatable. I reached in my bag and felt a zip lock bag, there it was, the homemade oatmeal raisin coconut cookies that I made the day before. I placed a few in my bag to snack on and forgot all about them. However, I was as happy as a newly saved sinner.
I smiled as I realized that I was vegan ready. I brought my own breakfast to the breakfast symposium and it was a delicious vegan crunchy oatmeal raisin coconut cookie.
