Vegan Day's Here!!!

Breakfast 
 It's finally here. We woke up early in the morning and was very excited. Let the Vegan Games begin. I looked around and noticed that I couldn't eat my oatmeal because it contained some ingredient that must have dusted off a bee so I made myself a cup of peppermint tea without sugar just to be on the safe side. Ally called, she stopped in the supermarket on her way to work to pick up something for lunch and she was overwhelmed. There she was, reading labels and asking me to google it. I checked for the vegan guidelines and looked up the items. We are so determined to abide by the vegan eating rules and day one was already proving to be much more difficult than we imagined.
Lunch

The big win was the salad that I prepared for lunch. Thankfully, we had the spring mix salad, some strawberries and blueberries, it was a delicious treat. I began to feel a sense of confidence that this journey will indeed be a lot of fun. We all checked in with each other to see how it was going. My King had lentil quinoa soup and Ally had a sesame teriyaki noodle bowl which had the vegan approval stamped on the package. Looks like everything was going fine.

 With all the research, all the anticipation, dinner time was approaching and I had no idea what we were going to have for dinner. We went through the list of vegan approved items while we shopped for the items. One thing I knew for sure, we could not go wrong with fruits and vegetables. I literally poured the mixed vegetables in a pot, added some soy sauce and steamed them. I served them in a bowl to the family and for a moment, they just stared at it. Here we were, Valentine's Day, eating a bowl of romantic vegetables, topped it off with some cashews for dessert. We marveled that we had 39 more days to go. I promised them that I will think of something else to serve for the upcoming dinners. It was a good first night - we ate our vegetables. Our parents would be so proud, I know that I was.
