The Last Supper

Twas the night before Ash Wednesday, we called it Vegan Eve. The Lenten season began on Ash Wednesday which also happens to be Valentine's Day. Each year, our family makes our declaration of the sacrifice we are making during the season of Lent. The sacrifices varies from giving up chocolate, chips, soda, cakes, cursing and more. As the season approached we began to discuss our sacrifice and that's when the great idea came - "I'm going vegan."

My King (husband) and my youngest daughter (Ally) decided to join me. We announced that we are going vegan for Lent. The other family members were less than enthused, the difficulty of giving up the fantastic feasting of life was just too much to ask. My daughters Aimee and Ashley entertained the idea of going vegetarian or pescatarian.

With great anticipation, we did our research on the vegan diet. We looked at recipes and relished the idea of coming up with creative ways to eat for 40 Days and 40 Nights without meat, poultry, fish, dairy - okay, we've got this. Well, it turns out that we had a lot more to learn about the vegan way of eating - everything must be vegan approved. Peanut butter, bread, jelly, cookies, juices, vitamin supplements, they even have vegan gum - the list goes on and on.

However, we were still excited about the new experience that awaits us. In the meantime, we feasted on the things we knew we would not be able to eat until the season is over. My King cooked a delicious beef chili, cakes, cookies, brownies, chips, donuts, you name it, we were getting it in.

On Vegan Eve, we enjoyed our last supper. Salmon, steamed carrots, yellow rice and salad. The final dessert was a cranberry scone, excited and convinced that we were ready for Lent.
