The Kitchen Sink

A cup of black coffee - straight nothing added, just hot and black. It is also a good morning to get out and go for a long run. I headed to the woods and got 6.5 miles in, an overwhelming sense of confidence gave me the boost that I needed. Tonight's dinner will be the rave of all raves.

Lunch
For lunch I had a banana and it was very satisfying. After all, the dinner I had planned for the evening was going to be just what the family needed to convince them that this was going to be a fun delicious journey. I actually looked on line and found some really cool vegan recipes. There was this one recipe that I found and I wanted to try but it called for vegetable broth. We had no vegetable broth but I was convinced that my vegetables will make their own broth so there - then there were some other items that we did not have so I ditched the idea for another time. It was now up to me to get it done - I was on my own.

As I looked around the kitchen, I became overly enthusiastic with the all of the vegetables. Now any other day, I could have a nice dinner with one or two vegetables as a side. Not today. Today I don't think there was a vegetable in sight that was not on the menu. I washed, peeled, chopped and emptied bags of vegetables into the pot of water. I added some curry, ginger, tumeric and coconut milk into the pot and the aroma made me feel like I was the real deal. The vegans will be coming to me for this one.

I allowed it to cook for close to an hour and a half. When asked what's for dinner, I replied "Kitchen Sink" yes, it was everything. Just before serving time, I placed the vegan approved Pita bread in the oven, filled the bowls with a decorative topping of cilantro. They enjoyed it so much that my King declared that he was fasting the following day😁 and Ally took a bowl for lunch to work.
