It's the thing we feared most, we wanted to do it just right. We were committed to following the vegan rules. On Sunday morning, Ally prepared the vegan approved pancakes. We were very excited to have two pancakes each when my King came in, unconvinced that we were doing right by the vegan laws. Although we showed him the Peta approved menu, he grabbed his spectacles - then read the ingredients from the box that we had. There it was, Mr. Inspector located that it had dried milk, we had the wrong Aunt Jemima Original Pancake Mix!!! We were supposed to have the Aunt Jemima Original Pancake Mix not the Original
Complete Pancake Mix. The Original mix is made with salt, leavening mixture and enriched flour, but you need to add milk and eggs which then knocks that option out. I am still not too keen on some of the substitutes as they are already taking away the treat that I had hoped to enjoy. With the Original
Complete Pancake Mix, all we had to do was add water - what a perfect way to cook a breakfast treat. At this point we were certainly not going to waste our food. We had quite a lively discussion as I defended my right to eat the pancakes. "We're all eating our pancakes and I'm giving us all a Vegan Mulligan," I insisted. All is forgiven, we will not allow this to happen ever again, besides we had the right vegan approved Maple Syrup.

As we got into repentance mode, I carefully planned a creamy pasta dinner with the instructions from a vegan recipe. However, as a habit, I added my own twist to the recipe. Whole wheat penne pasta, spinach, almond milk, minced garlic, cilantro (chopped), tomatoes (chopped), green onions, spinach, vegetable broth, broccoli, flour, a dash of salt, black pepper, chili powder and red pepper flakes. It was all good. My King whisked the mixture of seasons while I prepared the pasta, and steamed the vegetable. I added the sauce, covered it up for a few more minutes allowing the food to bathe in the sauce. Dinner was served. The quest to have the perfect homemade vegan meal continues. It's Sunday dinner, the stakes were high - it was a good attempt - yet it was lacking something. My King said that I was a bit too generous with the pepper. I agreed. Tomorrow I will add some vegan approved tomato sauce which I hope will enhance the flavor. The goal is to have an enjoyable vegan experience, one that is delicious, one that we would love to incorporate in our lives. We're only 5 days in and by the time this is posted, we will be on day 6. Day 6 is President's Day and we will be just fine. We will refer to the vegan laws and refrain from sin.
