| Potatoes, Almond Milk & Minced Garlic |
Today I was determined to get back on track. No more dining out. In fact, after March 1st, we are going to cut back on some other vegan approved snacks like Oreo's and some Chips. While my King declared that I must be crazy, I know for sure that I will not be buying any of those snacks and we will not have anymore in house until March 30th.
As the day progressed, I wondered what could I possibly come up with for tonight's dinner. I thought of making a simple cashew, carrot, ginger bisque served with a warm pita bread. However, I decided on using the potatoes that we have before they began to starve for some soil and grow roots. I thought I would bake them but I decided to save that option for another time. I washed the potatoes and place them in the pot to boil. I pulled out the vegetables as and sauteed them in a sauce. It was on and cooking.
When Ally came in, she asked "What's for dinner?" - I said "Something." At that moment she knew that I had no idea. I said a quick prayer, begging for whatever it was, please be a tasty meal. After all was said and done, we had a pot of mashed potatoes, mixed vegetables and Green Giants corn on the cob. I have never made mashed potatoes without butter and whole milk. The mashed potatoes would be different for sure (see recipe below). At my King's request, he asked that I add his Vegan Seitan leftovers to his dinner (I suspect as a backup). Although the mashed potatoes did not have any butter or whole milk, it was much better than I had anticipated. The dinner reviews were all thumbs up. Prayers answered!
